If you’ve ever tried fresh whipped cream, you know that no preservative-laden grocery variety can match the sweet, creamy peaks you get with the real thing. But if you’re daunted by the thought of hand-whipping your own topping, fear not. We’ve found a gadget that does the work for you.

The iSi Easy Whip produces twice the volume of hand whipping -- one pint of liquid yields about five pints of whipped cream -- in seconds. Plus, fresh whipped cream made with Easy Whip contains no preservatives, emulsifiers or stabilizers (most grocery aerosols do), and it stays fresh for up to 10 days in the refrigerator.

We talked with Judiaann Woo, executive director for culinary development at iSi, about how home chefs can experiment with the Easy Whip to create specialty whipped creams. You could add a liqueur for a grownup dessert-topper or to spice up your coffee. Maybe you’re in the mood for something savory? Try a whipped cream with strained horseradish and cayenne pepper on top of steak or vegetables. Experimentation is half the fun!
