We now have homemade pizza

Works great. We never had this sort of success with a stone pizza surface. It is heavy and does have to be maintained (dry in oven after washing to prevent rusting) but in our eyes, worth it. The pizzas my husband is making rival the artisan creations at trendy restaurants.

It consistently gives a great crust. There a two reasons I give this a 4 out of 5. 1) If you're in a hurry, this really isn't an option because I find it needs at least a 20 minute heat up time before use or it just slows the cooking process. I don't think this can be changed because the mass of the item is part of what makes it work well when you do let it heat up. 2) My pan is well seasoned but I find it still rusts a bit because it's heavy and scraps in and out of the oven on the oven rack. Consequently, I do need to keep treating it with oil to re-seal the scraps.

Improvement over stone

I always had a stone in my oven, primarily for pizza but decided to try this steel. First mistake was using the same timing: 10 minutes resulted in a crisp to hard pizza crust, no dough flavor left. Next time I reduced it to 6 minutes and had a perfect result, crispy and chewy at the same time.
