  • Made in the USA: East Durham, NY
  • Instructions: For long term storage of cheese, it is recommended to keep at refrigeration temperatures (34º Fahrenheit to 39º Fahrenheit, preferably 39º Fahrenheit). For seven to ten days, you can store cheese in the Grotto under 70º Fahrenheit on the counter or in a cellar. Leave one inch of room around each cheese style. Smaller pieces of cheese require more humidity because they have more faces that can oxidize or dry out. So replenish the brick more frequently if you have only tiny pieces of cheese left in the Grotto
  • Vaulted ceiling for optimal air flow and condensation control
  • Great for all types of cheese except for those that should be stored in a brine i.e. mozzarella and feta
  • Please note: Different styles of cheese can be stored at the same time, just leave 1 inch of room around each cheese style. Wood has the potential to harbor bacteria and pathogens if not cleaned properly and regularly

Care
Apply mineral oil monthly to the bamboo shelves. Wash shelves with extremely hot water and a splash of distilled white vinegar. Allow the Grotto shelves to air dry between uses

Mezzo capacity
Stores up to 2 pounds of cheese. Best fit for a small-medium refrigerator
Classico capacity
Stores up to 8 lbs of cheese. Best fit for a medium-large refrigerator. Features adjustable back panel for additional ventilation for curing and ripening styles of cheese. With the exception of aging cheese in the Grotto Classico, the recommendation is to only open the back vents a quarter of the way
Fresco capacity
Stores up to 6 pounds of cheese. Best fit for a small-medium refrigerator
