Runny mess - Despite my great attn to detail
12/28/2018 by Mike
I ordered 3 of these kits (one for myself, 2 as gifts). Only one was shipped by vendor in time for Xmas :( Grommet notified vendor and they sent the 2 they initially forgot - but not in time for Xmas. Anyway, just tried making the burrata cheese with the one kit I kept. I am an engineer, and follow instructions to the T. Despite buying expensive ($10 for two 1/2 gals), non-homogenized cow's milk from a high-end store (Kings), all I was able to make from this kit was a soupy mess. It coagulated somewhat, about to the consistency of runny oatmeal. When I got to the step that tells you to use a knife and cut the curd, I knew I was in trouble as there was nothing to cut (try cutting oatmeal). I certainly will not give these as gifts, as most people lack the attention to details (unlike engineer me). I suspected this was going to be a iffy proposition when I saw part of the instructions that said what to do if it doesn't yield the expected results. I also saw no mention of an instructional video. Surely if this kit really works the majority of the time, they could produce a simple video of the process, right? As you guessed, I cannot recommend this product :(
A heck of a gift

My son in law is a cheese fanatic and he loves making it himself. And he loves when I gift him with these kits. Always a hit. Glad I found it.

Urban Cheesecraft

When Claudia Lucero set out to try her hand at cheesemaking, she was surprised at how difficult it was to find supplies and overwhelmed by some of the special equipment that some recipes required. After all, cheesemaking has been going on for centuries. Should it really be this complicated to try in a modern home? None of us has calibrated presses, humidity gauges, and acidity testers in our home kitchens.

After lots of research and perseverance, Claudia refined her own techniques for making fresh cheeses that don’t require aging and can be made at home with little or no special equipment. Now she’s sharing her experience with fellow aspiring cheesemakers.

With an Urban Cheesecraft DIY Cheese Kit, all you need is a gallon of pasteurized milk (not ultra-pasteurized). The kits include the rest of the supplies such as cheesecloth, a dairy thermometer, vegetarian rennet, citric acid, and cheese salt. (Supplies vary depending on the kit you choose.) Just follow the instructions, and in about an hour, you’ll have fresh mozzarella, ricotta, queso blanco, paneer, or goat cheese. Once you get the hang of it, you can have fun experimenting with different spices, shapes, and recipes. Your taste buds will love the effort.
