With a short flexible blade, the 3" Paring knife is a kitchen essential—perfect for paring, trimming, and peeling fruits and vegetables. The Fillet knife is perfect for cutting and trimming fat, removing fruit and vegetable stems, and removing the bones and skin from fish, meat, and poultry. The Chef knife is a great prep knife for slicing through fruits, vegetables, cheeses, and smaller cuts of meat, poultry, and fish.

  • Materials: Blade: High carbon steel (1095); Handle: Honduran rosewood
  • Care: Hand wash your knives before using for the first time and after food preparation, in hot water with a mild detergent instead of the dishwasher
  • Blade is precision ground, hand-edged, and honed resulting in a superior, long-lasting edge
  • The blade and tang are fabricated from a single piece of steel. The tang is triple brass riveted to the handle, providing strength, durability, and perfect weight and balance
  • The handle is made of Honduran rosewood noted for its beauty and durability. Handles are infused with a wood stabilizer, and then hand polished to a high luster
  • Contoured handles are designed for comfort and a variety of grips
  • Each blade is cryogenically treated, substantially increasing edge retention
  • Following assembly, each blade goes through a final buffing process, giving the knife its superior, razor-sharp, and long-lasting edge
  • With use, especially when in contact with acids (citrus, tomato, onion, etc.), a carbon blade will gray and blacken. While this appearance may not have the aesthetic appeal of stainless steel, the “patina” prevents the formation of the more oxidative common rust
  • A light coating of mineral oil periodically will protect the steel and wood, as well as enhance the look
  • Don't cut on a hard surface. We recommend wood or bamboo cutting boards and chopping blocks

Dream knife - but I woke up

I keep shopping for a razor sharp knife. I couldn't wait to get my knife from you, and planned to get other sizes if I liked it, But, really,eally, I was disappointed that it was very
sharp, but no different than the ones I have. Plus the
staining which you already warmed me of is a turn off,
and not putting it in the dishwasher is another negative.

However, it is just as you advertised, and cuts very thin
slices of pickles, but I had hoped for slicing thro a tomato
skin without piercing it first, but it didn't work to my
satisfaction.

I am honest in my comments, altho it hurts to send you any review that is not 1000 percent. I know you want to know.

Outstanding tool!

Everything about this knife is "right". Right size, right weight, right hand feel, right sharpness. Persons unused to carbon steel will need to read the directions for care -- but really folks it's not much: a handwash and wipe dry after use. The payoff is the wonderful sharpness and the ease of maintaining the edge. Delivery was prompt. Could not be happier.More > < Less

My wife has beencoveting a good knife for a while. This one delivers. It does stain easily, but you just need to keep it dry. And it buffs-up easily.

beautiful knife

very finely crafted high carbon chef's knife. the balance in the hand is excellent. the blade is beautifully tapered to an angle of 16 degrees that takes a razor sharp edge. the long lasting edge is easiy maintain with two or three swipes of a sharpening steel. the riveted rosewood handle is very comfortable in the hand. the offset of the blade at the tang allows the used to choke up on the top of the blade for very precise control when doing fine work. a little consistent care washing, drying and oiling the blade keeps it in perfect shape and develops a beautiful blue patina. it's an excellent knife, well worth the priceMore > < Less
