Great pan. Be patient with building seasoning.

It's one of my favorite pans. It's lighter than my cast iron skillet. It heats up very fast. The challenge is to be patient with building up the nonstick seasoning layers. Initially, I thought I would be diligent and try all sorts of methods (oven and stove top baked on layering of oil; frying potato skins and salt; etc.) to rush the building of the patina, but nothing seemed to work for very long, and the patina would come off. Then, I decided to cook only fatty meat in the pan until nonstick seasoning layers accumulated. Now, the pan performs better with every use, and I find myself favoring this pan over my many others. Be patient with building the patina, and you'll be rewarded. This pan is a keeper.More > < Less
